Sweet Spinach Salad

2 cups organic spinach
1/3 cup dried pitted prunes (halved)
1/3 cup dried apricots (halved)
1/4 cup chia seeds
1/3 cup pumpkin flax granola

Dressing:
1 tsp apple cider vinegar
2 Tbsp lemon juice
1/4 cup hemp oil

Great salad for energy! Nice mid morning snack or at lunch with hot soup  :)

Easy Green Salad

1/2 cucumber
4 celery stalks
Handful mixed nuts
Garlic veggie seasoning
1/4 cup hemp oil

Apricot Hemp Veggie Salad

2 cups organic herb salad
Handful dried apricots
1 tomato (sliced)
1/2 cucumber
1 sprig fresh dill
5-7 blades of chives (chopped)
1 tsp cilantro
1/4 tsp garlic (minced)
1/4 cup feta cheese
1/3 cup hemp seeds

Dressing:
2 tbsp organic lemon juice
1/4 cup hemp oil
1 tsp apple cider vinegar
Dash of sea salt and pepper

This salad is great anytime. I love it at lunch or even a late night snack!  :)

Portobello Mushroom Burger Recipe

A portobello mushroom is a great vegetarian substitute when making burgers!
Here's how I made mine:

2 slices Chia bread  (wheat/ gluten free)
1 Organic portobello mushroom
Sprouts (any kind: alfalfa, radish etc)
Hemp oil
Grape tomatoes
Feta cheese
Garlic hummus
Cilantro
Fresh cracked pepper

1.Toast the chia bread. Place mushroom on toast, brush w/ hemp oil and sprinke
cilantro on top (mushroom can be cooked, but I prefer to eat it raw)
2. Spread hummus on other piece of toast. Add sprouts on top (the more
the better)
3. Slice tomatoes, and place onto sprouts. Sprinkle w/ feta cheese and pepper.
4. Combine both slices to create the mushroom burger. Cut in half. Enjoy!

Superfoods Part 1: Bee Products

Did you know that the longest living people in this day and age have been known to be Bee Keepers? There is something special about products that come from the bee. The little creatures that aerodynamically shouldn't be able to fly have special longevity properties. From Wild raw honey to Bee pollen, Propolis and Royal jelly, these all have benefits.

My favorite is Royal Jelly (the honey produced by the queen). The queen is able to live 300 x longer than the workers because of the special royal jelly. I bought these tinctures (10 pack) at Planet Organic for $7.99. Good place to start, but if you want optimal benefits, go with pure royal jelly. It has a really strong flavor but so worth it.  Mix with something sweet and spread on toast (has a thick consistency).

Kale Chips Recipe

I love kale chips! They're so full of nutrients and are super easy to make.
Here's my recipe for a meal using these:

3 or more kale sprigs ( I used red kale from Planet Organic)

Seasoning:
- Lemon juice (1/2 lemon)
- Hemp oil (2 tbsp)
- Apple cider vinegar (1 tbsp)
- Sea salt (pinch)
- Fresh ground pepper (1 tsp)
- Garlic herb seasoning
- Hemp hearts (1/4 cup)

Wash the kale, and remove leaves from stems. (Just eat the stems raw, they're full of flavor).
Place leaves in a salad spinner or pat dry. Combine seasoning. Drizzle over leaves in a bowl,
and massage into leaves with hands. (Leaves  will soften and shrink in size). Spread out onto
 greased cookie sheet. Bake on low (275 Degrees) for 20-25 mins) or until crispy.
*A food dehydrator can also be used for making these chips.

* Use a soft dip with these. They will be fragile ( I used greek yogurt with crumbled goat cheese and veggie seasoning).

* For a meal, these pair nicely with quinoa soup ( I used organic Gogo cream of quinoa from Save on Foods) Garnish with a sprig of fresh dill.  Enjoy! Best meal ever  :)

Salba Water

This is my favorite way to have whole Salba seeds!
All you need is 2 tbsp. per day. Mix with water
and watch the magic happen.  The seeds are incredibly
small, but hold 12 x their weight when water is added.
Stir and enjoy. ( In addition to unparalleled nutrition, it
is also great for weight loss, and can be used as a meal
replacement. Easily digested but provides a full feeling.)

Ultimate Super Green Smoothie!

I love this first thing in the morning! Here's what I put in it: ( *all ingredients are organic)
- 1 cup orange juice
- 1 tbsp lemon juice
- 1 cup water
- 1/2 cup frozen peaches
- 1/3 cup mint
- 1/3 cup dill
- 1/3 cup kale
- 1/2 cup parsley
- 3 celery stalks
- 1/2 cup herb salad mix
- 1 scoop Amazing Grass Super Green Powder

Blend well. Sprinkle w/ fresh ground  Epicure 4 pepper blend (black, green, white & pink peppercorns) and mint leaves. Invigorating!
