2 cups organic spinach
1/3 cup dried pitted prunes (halved)
1/3 cup dried apricots (halved)
1/4 cup chia seeds
1/3 cup pumpkin flax granola
Dressing:
1 tsp apple cider vinegar
2 Tbsp lemon juice
1/4 cup hemp oil
Great salad for energy! Nice mid morning snack or at lunch with hot soup :)
